Unzipping
is a term that was coined by the founder, Peter Stellas of No Bones
About It, Inc. Peter had learned an unusual technique of filleting
fish while working at fish markets in Chicago.
Taught
the basics by an Asian man from Hawaii, Peter took that knowledge
and further developed the concept to make it easier to fillet fish
from the belly.
While
using this technique he noticed as he removed the whole skeletal system
that it sounded much like a zipper unzipping. From here the term "Unzip
your fish" was created. When unzipping the fish, you don't even have
to gut the innards. The insides pull out with whole skeleton structure
in one clean move. It's fast, easy, and anyone can learn.
